Rekindling old Delhi’s culinary soul

Old Delhi Nostalgia Finds Contemporary Expression
At a time when “modern Indian dining” often means deconstructing familiar dishes beyond recognition, Daryaganj Gold takes a refreshingly different route. It elevates North Indian cuisine without disturbing its soul. The newly launched flagship format of the Daryaganj brand in Aerocity is not merely a larger restaurant; it is an attempt to give classic North Indian food the scale, theatre, and dignity usually reserved for global fine-dining concepts.
The moment one enters the expansive 150-seater space, the intention is clear. Gold-plated tandoors glow in the open kitchen, chefs move with choreographed precision, and the mood balances old Delhi nostalgia with contemporary luxury. Yet, for all its polish, the restaurant never feels intimidating. Instead, it carries the warmth of a family celebration.
What makes Daryaganj Gold stand apart is that it resists the temptation to reinvent for the sake of novelty. Its celebrated Butter Chicken and Dal Makhani continue to anchor the experience, drawing from recipes linked to the legacy of Kundan Lal Jaggi. But the new Gold menu introduces thoughtful additions that surprise without alienating. The chaat selection is particularly inventive. Dahi Bhalla Bingsu and Mushroom Ram Ladoo reinterpret street-food memory with finesse, while the Daulat Ki Chaat evokes the fleeting winter delicacy of Old Delhi with admirable delicacy.
The highlight, however, is the Five Senses Curries. The dish arrives not just as food, but as performance - the whistle of the cooker, the aroma escaping the lid, the slow reveal of deeply spiced gravy, and finally the tenderness of the meat. It captures what Co-Founder and CEO Amit Bagga calls “presenting familiar food in a contemporary and engaging way, without changing its soul.”
Bagga’s larger philosophy is visible throughout the restaurant. “Modern Indian dining in 2026 is not about changing the food, but about changing how it is experienced,” he says. That idea defines Daryaganj Gold. It respects nostalgia but refuses to remain trapped within it.
The live chaat counters, chef theatre nights, unplugged music performances, and intimate private dining rooms all add layers to the experience. Yet, the real triumph is simpler: beneath the glamour, the food still comforts. In a city crowded with fashionable dining experiments, Daryaganj Gold succeeds because it remembers that memory itself can be luxurious.
