In a culinary landscape where tradition often wrestles with modernity, the collaboration between The House of Rohet and the Bombay Canteen emerges as a beacon of inspiration-an immersive blend of Rajasthani flavours reimagined with contemporary flair.

The much-anticipated collaboration began with an exclusive pop-up dinner that explored the culinary tapestry of Rajasthan, showcasing the prowess of Chef Hussain Shahzad. Against the backdrop of Rohet House and Mihir Garh - the event offered a distinctive 7-course menu designed to tantalse discerning palates.

The vegetarian selection delighted with Tandoori Carrots, Chakli Churros, and a sumptuous Coffee Rasgulla Sundae, while the non-vegetarian offerings featured Rabbit Cutlets and Lamb Raan Xacuti. Each course acted as a delightful narrative, spinning tales of India’s bustling culinary heritage. Guests sipped on the Jodhpur Highball, with its heady fusion of Singleton whiskey and fragrant fennel cordial and indulged in the Royal Rajasthan-an enchanting infusion of Tanqueray and chamomile gulkand.

Not limited to just cooking techniques, guests embarked on a guided Street Food Walk through the bustling streets of Jodhpur. This tour highlighted the energetic pulse of local food vendors, introducing participants to the intricacies of Rajasthani street cuisine. From crispy Kachoris to rich DaalBaati, each bite told a tale of recipes passed down through generations.

By reinterpreting traditional recipes through a contemporary lens, The Bombay Canteen managed to present a menu that was as innovative as it was respectful of its roots, showcasing the artistry behind Rajasthani cuisine and its evolution.
