Burma Burma celebrates its 10th anniversary with a limited-edition menu, showcasing regional Burmese dishes from across the country, writes TEAM EXOTICA

Burma Burma Founded in 2014 by childhood friends Chirag Chhajer and Ankit Gupta, Burma Burma (Hunger Pangs Pvt. Ltd.) operates thirteen restaurants and delivery kitchens across India. The restaurant’s concept draws from Gupta’s Burmese heritage and his family’s culinary traditions, combined with his father’s legacy in the restaurant industry. Over the years, Burma Burma has become synonymous with authentic Burmese cuisine, offering a contemporary dining experience that melds tradition with innovation. In 2023, Burma Burma was voted No. 34 at the Condé Nast Traveller Top Restaurant Award.

A Special 10th Anniversary

The Diverse Flavours of Burma: In celebration of its 10th anniversary, Burma Burma, India’s award-winning Burmese specialty restaurant and tea room, invites diners on a culinary journey through the diverse regions of Burma with its limited-edition ‘The Ten-Year Trail menu. This special menu, available from August 12 to September 30, 2024, across all Burma Burma locations in India, is a tribute to the restaurant’s decade-long dedication to preserving and innovating Burmese cuisine. Since opening its first outlet in Fort, Mumbai, in 2014, Burma Burma has expanded to thirteen restaurants and delivery kitchens across major Indian cities, including Mumbai, Delhi NCR, Bengaluru, Kolkata, Hyderabad  and Ahmedabad. Over the years, the restaurant has gained a loyal following for its authentic representation of Burmese flavors and its unique dining experience that transcends borders.

The Ten-Year Trail: The ‘Ten-Year Trail’ menu of Burma Burma’s relentless exploration of the culinary landscape of Burma. The menu features a selection of dishes that showcase the rich culinary heritage of Burma, each dish inspired by the unique flavors and traditions of the seven regions of the country.

From the bustling streets of Yangon to the serene hills of Kachin, the menu offers a wide array of regional delicacies. Highlights include the Highway Meal Parcel from Yangon, a convenient meal for commuters consisting of steamed rice, curry, salad, and fresh herbs; the Siman Thoke from the Shan region, a refreshing salad made with chickpea tofu shreds and raw papaya; and the Kho Poong with Pebok Chet from Bago, a sustainable one-pot dish inspired by monastic cooking, featuring a white pea and roselle curry served with a spicy fermented soybean relish and rice.

Every dish on the menu is a result of a decade of culinary discovery, meticulously crafted by the culinary team led by Chef Ansab Khan, who has made frequent research trips to Burma to uncover hidden gems and traditional recipes.

Beverages and Desserts

A Perfect Pairing: Complementing the savoury dishes are a selection of unique beverages that capture the essence of Burma’s diverse geographies. The Mont Let Saung, a traditional Burmese cooler from the town of Inle, is a refreshing blend of palm jaggery, coconut milk and toasted coconut shavings. Another must-try is the Kan Lan Yay, a delightful concoction of fresh sugarcane juice with raspberry purée, lime and nori salt. For those with a sweet tooth, the Durian Float offers an adventurous taste of Burma’s infamous durian fruit, blended with banana milk, black grass jelly, and nata de coco.

No meal is complete without dessert and the anniversary menu does not disappoint. The Burmese Milk Tea Cheesecake is a standout, infused with Burmese tea and topped with brown butter streusel, stewed roasted apple confit, cinnamon ice cream and spiced tea tuile. Other indulgent options include the Burmese Tropical Fruit Pavlova with coconut Chantilly, tropical fruit salsa, mango gel, ginger coconut ice cream, and mango passion caviar and the Citrus Tea Leaf – a tea leaf financier with lemon fermented tea foam, kaffir lime curd, honey Chantilly, honey gel, almond streusel, and citrus mango ice cream.

The restaurant’s founders, Chirag Chhajer and Ankit Gupta, have stayed true to their vision of bringing authentic Burmese cuisine to Indian diners, inspired by Gupta’s Burmese roots and the rich culinary heritage passed down from his mother’s side of the family.
