Chef Sabyasachi Gorai has come up with aaloo parantha pancakes and maple soaked waffle jalebi and fafda in honour of the US president

It is not only the chefs at ITC Maurya who have been toiling hard to serve a special meal to US president Barack Obama. There are other chefs, too, who are rustling up a dish or two to honour Obama. Chef Sabyasachi Gorai or chef Saby is one such culinary master who has come up with two special dishes in the breakfast menu of Amreli at Hotel Diplomat for the US president. A casual chat with a friend led to the idea that he can create a dish or two for Obama and can send across a message to him and his entourage through a TV show that they do takeaway for their neighbouring hotels and important visiting dignitaries. “Nothing was pre-planned and I did not do any research to find out what he likes to eat particularly. But I have been reading over time that he likes to try out different flavours and is health conscious. So the two dishes that I have created for him offer Indian flavours in a very contemporary way,” says Saby.

The chef has created aaloo parantha pancake with frozen mint yogurt cream cheese ice cream served on a banana leaf. “It is a modern take of our aaloo parantha. The soufflé of frozen mint, yogurt and cream is served as a scoop on the top of the pancake to give the flavours of chutney and dahi, our famous accompaniments to aaloo parantha,” shares the chef.

The other dish is a maple soaked waffle jalebi with Gujarati fafda. The flour that is used to make the pancakes has also been used to make the jalebis which are dipped and soaked in maple syrup. “Fafda and jalebi is a traditional Gujarati combination and is very much loved. Since, everything from Gujarat is making headlines these days, I thought it will be a good idea to present something from the region to Obama,” says chef Saby.

In case you too want to sample the dishes prepared specially to honour the US president, the dishes are available at Amreli all day long, till dinner.
