Machan, the 24-hour eatery at The Taj Mahal Hotel, New Delhi, brings a week-long Colombian Food Festival that offers sumptuous menus curated especially by Chef Alejandro Gutierrez and Executive Chef Arun Sundararaj. Delicacies include lamb Carimañola, Paipa Cheese Crumble and Pickled Cubios, Fish of the day grilled in banana leave, Patacones with Hogao and Chorizo and Prawn Ceviche. For dessert there is Strawberry and Mint Meringue, Vanilla and Arequipe Mini-millefeuille and Cuajada Fresh Cheese with traditional Sweets. Then there are mocktails inspired by flavours of Colombia. Guests can also savour the taste of Colombian coffee at the Emperor lounge all day long.
