The new lady bartender at Polo lounge, Hyatt Regency, Marine Chabaud, is in love with masala tea, Indian mangoes and spices like cinnamon and cardamom. She is looking forward to make some fine additions to the menu with these ingredients
France, Greece, Morocco, Paris and now India — Marine Chabaud is having a time of her life travelling across the globe, exploring new flavours. Marine is the new lady bartender at Polo lounge, Hyatt Regency and is excited to be in India for the first time. “I was the bar manager at the Buddha Bar in Paris and I wanted to come to India as it is known as the land of spices.
I am looking forward to come up with interesting concoctions with different spices. Also I am excited to impart tricks of the trade to the fantastic team at Polo lounge where many great bartenders in India have worked. I am also very happy to meet the Indian connoisseurs,” she said.
Marine is in love with masala tea and is using it a lot these days. “Also the mangoes here are so tasty. Spices like cardamom, cinnamon are very common in India and I have always loved them as ingredients to my drinks,” she added.
She is looking forward to making some fine additions to the existing cocktail menu at the Polo lounge. “I want to instill that European feminine touch in taste, textures and presentations,” she added.
Marine discovered her love for mixing drinks when she undertook a seasonal job as an assistant bartender at a ski resort. “It was almost accidentally that I became a bartender. I found out that I am passionate about coming up with interesting concoctions so I decided to pursue it professionally. I learnt on the job and once I was well-versed with basics, I started practising on my own. I think this job is perfect for me as I am a creative person. I also love meeting people,” she said.
Marine feels that balance of ingredients plays an important role in mixing a drink. “A good drink should neither be too sweet nor sour and it should be served chilled. One should be careful about the dilution of ice as no one likes a drink that’s too watery. Before mixing a drink, know your guests’ palate, ask them what kind of drinks they like and then serve them something that is new but is as per their taste and liking,” she shared.
