Fusion twist to navratri fare

Fusion twist to navratri fare

The king-sized special Navratri thalis have been satiating the hunger of those observing the nine-day fast. How about we replace the ubiquitous sabudane ki kheer, singhare ki poori, aloo bhaji, et al., with some fresh fruit pizza or veggie rolls made of kuttu ka attaIJ Or maybe some cottage cheese dumplings or chinese bread with pumpkin and lotus stem cooked in Sichuan styleIJ

Priyank Sukhija owner of The Project, Hauz Khas Village says, “Navratri does not mean that one should go tasteless or all Indian. I believe that it can be tempting and we can try with different cuisines as well. For these special days we have special fruit pizzas or dessert pizzas like apple caramelised pizza, banana pizza and more. Also along with this we have special fruit mocktails, which our mixologists will be customising with seasonal fruits. People want to try things.”

Jaypee Vasant Continental’s restaurant Paatra has gone completely vegetarian for nine days and is offering a lavish north Indian cuisine fare including palak akhrot ki tikki, bharwan toorai, kacche keley ke shami, et al.

Executive chef Avinash Jha shares, “Ever since we've introduced these dishes, there have been so many queries and the response has been very encouraging. We would continue to offer the same dishes with slight changes even after Navratri is over."

Global Food Factory, Rajouri Garden, has launched kuttu wraps and pizzas with kuttu atta base. But owner Gaurav Mehta tells us that people usually preferthali over other avant-garde dishes. “We wanted to try something new but there is no fuss in creating ten different things. One must serve quality food and what’s in demand.”
