What inspired you to specialise in sushi and Japanese cuisine?

My profound passion for cooking, coupled with an unwavering desire for continuous learning, serves as the primary motivation behind my culinary specialisation. I find immense joy in exploring new flavours, techniques, and cultural influences, which allows me to expand my culinary knowledge and skills. The innovative methods used in crafting Japanese dishes continually ignite my imagination and challenge me to elevate my own culinary creations. This interplay of passion, exploration and inspiration drives me to push the boundaries of my craft, striving to create dishes that are both innovative and reflective of the rich traditions that influence them.

What is the most challenging aspect of crafting high-quality sushi and how do you ensure consistency in flavour and presentation?

The greatest challenge in crafting high-quality sushi is the need to tailor each dish to cater to a diverse array of tastes. Achieving this balance requires a deep understanding of flavour profiles and the ability to adapt traditional techniques to suit modern palates. To ensure that our creations not only meet but exceed our guests' expectations, we place a strong emphasis on sourcing only the freshest, top-grade ingredients. By prioritising these high standards, we aim to create a memorable dining experience that resonates with sushi enthusiasts and newcomers alike, showcasing the artistry and precision that define this beloved cuisine.

Can you tell us about a signature dish or unique twist on traditional Japanese recipes that you offer at Boya restaurant?

Shokunin Maki is a signature roll that I take immense pride in creating. This dish showcases a harmonious blend of premium tuna cuts, including Akami, chutoro, and otoro, each contributing its unique flavour and texture. The Akami, known for its lean and rich taste, is complemented by the buttery and marbled chutoro and otoro cuts, which add depth and luxury to the roll. To elevate this combination, I incorporate crispy tempura flakes that introduce a delightful crunch, balancing the tender fish. Fresh spring onions provide a burst of brightness, enhancing the overall flavour profile. Finally, a zesty spicy sauce ties all these elements together, infusing the roll with an invigorating kick that tantalises the palate.

How do you source your ingredients, particularly the fish and seafood, to maintain freshness and authenticity in your dishes?

At our establishment, we place a high priority on sourcing the finest ingredients from both local and international suppliers. This commitment is especially vital in Japanese cuisine, where the freshness of raw fish and seafood is paramount due to their delicate nature. We recognise that the quality of these ingredients directly impacts the authenticity and overall flavour of our dishes. Fortunately, we have cultivated strong relationships with reliable suppliers who specialise in authentic Japanese products. These partnerships enable us to consistently provide our customers with the highest quality ingredients, ensuring that every dish we serve not only meets but exceeds expectations in terms of taste and authenticity.

For someone new to Japanese cuisine, what would you recommend they try first and why?

For those who are new to Japanese cuisine, it is advisable to begin with fried or cooked dishes before venturing into the realm of raw fish. This approach allows guests to acclimate to the unique flavours and textures that characterise Japanese food. Starting with popular fried or marinated signature rolls provides a gentle introduction, making the experience more approachable and enjoyable. As diners become more comfortable with these initial flavours, they can gradually transition to Nigiri and sashimi. This step-by-step progression not only enhances their appreciation for sushi but also enriches their overall understanding of Japanese culinary traditions. emphasising gentle tastes that highlight the natural essence of ingredients. In contrast, Indian cuisine is celebrated for its bold and robust flavours, characterised by an array of spices that create a vibrant and complex palate.
