Food factory

Factory by Sutra is yet another microbrewery in the heartland of Gurgaon crafting beer and more with a twist. By Jigyasu Joshi

As you enter Factory by Sutra, the décor takes you back to those German factories we have see in Hollywood movies with half cemented brick walls, small iron bridges and large containers which have cement rolling in, except in this case it was beer. So given the name, the factory element is quite prominent in the interiors. The brewery has four in-house brews each with a distinctive flavour. Among the choices of Premium lager, Dark, German Wheat and Dunkel Wheat, we chose the lager and the German. Both were mild and tasted absolutely fresh.

To start with we were served Delhi 6, which were golgappas stuffed with bhelpuri topped with aaloo tikki and chutney, pretty unique in both presentation and taste. The stuffing was a perfect combination of sweet and sour and was light on the tummy. Next up was kurkuri bhindi nachos. Coated in gram flour and fried, the okra was crisp, tossed with onions and tomatoes. We highly recommend this one. The dahi kebabs however tasted bland and remained untouched for most of the time. The soya keema pita bao was appetising to the hilt. The soya mince was not dry at all and the flavour of the sauces was evident from the first bite. Served next was the lemon garlic fish, soft in texture the fish was succulent but the lemon sauce made the dish tangier than it was needed, ruining the flavours completely.

Moving on, we ordered some rolls for us, chicken tikka and spring rolls. The chunks of chicken were tender and juicy, marinated in mughlai spices. The exterior of the roll was crisp. Unlike the rolls where the huge size is bit of a hassle and the sauces spill out, the chicken tikka roll here was perfectly sized and manageable. The spring roll was Thai chili combined with capsicum, cilantro and sautéed red onions with sweet chili sauce. As spicy as it may sound, the spring rolls were near perfect amalgamation of sweet and spicy. Different flavours of the veggies in the crisp blanket were a treat for the taste buds.

Coming on to the main course, we ordered Dal Factory, chicken biryani and lahore mutton curry. Usually dal makhanis in the city are served too buttery but here it was near perfect and exhibited a greater taste. The chicken biryani was quite aromatic and palatable. The well cooked rice coated the tender spiced chunks of chicken nicely, making it high on flavours. Next on our table was lahore mutton curry. The melt-in-mouth mutton pieces cooked in khada masala, proved to be a really wonderful dish.

In the desserts, our table was all rich chocolaty. We were served chocolate lava cake, chocolate rum balls and apple crumble. The lava cake did not disappoint us. The hot melted chocolate and the soft bread made our day. The rum balls didn’t stand out much even with the liquorish flavours. The best out of the lot was apple crumble. Topped with the perfect streusel, it had all the amazing flavours going in.
